Green Chile Blue Cornbread Mix

Servings 12 muffins

Ingredients
  

  • 1 bag Green Chile Blue Cornbread Mix
  • 3/4 cup hot water (May use milk instead of water for added nutritional value)
  • 2 eggs slightly beaten
  • 1/2 cup canned, or frozen and defrosted, corn kernels (OPTIONAL)

Instructions
 

  • Preheat oven to 425°.
  • Place package contents in large mixing bowl.
  • Add slightly beaten eggs, and stir until evenly moistened.
  • Gradually add hot water. Stir until well-blended (add optional corn).
  • Pour batter into lightly greased 12 count muffin tin or 8” x 8” x 2” baking pan.
  • Bake approximately 12 to 15 minutes for muffins, or 20 to 25 minutes in baking pan – until lightly browned and firm.
