"Ai Chihuahua" (Pasilla Negro Chile Sauce)
This Chile paste is perfect as an enchilada sauce or to serve with blue corn tortilla chips as a dip.

- 3 Chiles Los Chileros Chile Negro chiles
- 3 Large Tomatoes
- 1/2 Large Red Onion
- 1 tsp Sugar
- 3 Cloves Garlic
Soak negro chiles in boiling water for 8-10 minutes.
Remove most of the seeds and combine with water used to boil chiles, and remaining ingredients in a blender. Blend to desired consistency. Salt to taste.
