Rub seasoning on both sides of each steak.
Heat gas grill on High for 10 minutes with lid closed. If using charcoal, when coals are covered with a light layer of ash, about 30 minutes.
Cook steaks 4 inches above coals, about 10 minutes per inch of thickness.
Squeeze lime wedges over steaks and serve immediately.
Serve with mixed green salad topped with Los Chileros Firecracker Dressing and vegetables.
