Put all ingredients in large plastic resealable bag.
Combine package with 1/2 cup olive oil and 1/4 cup white wine or water. Stir well to dissolve mixture.
Pour marinade into bag with chicken and vegetables, being sure to coat all the ingredients. Chill in refrigerator for 30 minutes while kabob skewers are submerged in water.
Preheat gas grill or charcoal to medium heat (375°).
Remove bag from refrigerator and alternatively put chicken, pepper, tomato, onion on each skewer.
Grill until internal temperature reaches 165°.
