Grilled Chicken Kabob

Ingredients
  

  • 2 chicken breasts, boneless/skinless cut into 1-inch cubes
  • 1 Yellow Bell Pepper cored and cut into 6-8 pieces
  • 6-9 cherry tomatoes
  • 1 white onion cut into wedges
  • 1 oz Los Chileros Pueblo Chicken Rub

Instructions
 

  • Put all ingredients in large plastic resealable bag.
  • Combine package with 1/2 cup olive oil and 1/4 cup white wine or water. Stir well to dissolve mixture.
  • Pour marinade into bag with chicken and vegetables, being sure to coat all the ingredients. Chill in refrigerator for 30 minutes while kabob skewers are submerged in water.
  • Preheat gas grill or charcoal to medium heat (375°).
  • Remove bag from refrigerator and alternatively put chicken, pepper, tomato, onion on each skewer.
  • Grill until internal temperature reaches 165°.
