Green Chile Chicken Burritos


  • 4-5 boneless chicken breasts
  • 1/2 cup shredded cabbage
  • 1/2 cup diced tomatoes
  • 1/2 cup diced onions
  • 1/2 cup shredded lettuce
  • 4 8-inch flour tortillas
  • 1/2 cup diced avocado
  • 1/2 cup shredded Monterey jack cheese


  • Rub chicken with Green Chile Rub on both sides, and bake in oven at 350 degrees for 20 minutes.
  • When cooked, cut chicken into thin strips and lay them in the center of the tortillas.
  • Spread all of the other ingredients on top of the chicken, and fold in the sides and roll to form a burrito.
  • Top with red or green chile sauce. Serve with beans and rice.
