¡Ai! Chihuahua (Pasilla Negro Chile Sauce)


  • 3 Los Chileros Negro Chiles
  • 1 cup boiling water
  • 1/2 large red onion
  • 3 large tomatoes
  • 1 tsp sugar
  • 3 cloves garlic
  • salt to taste


  • Bring water to a boil. Remove from heat and soak chiles for 8-10 minutes.
  • Remove seeds from chiles, and combine remaining ingredients in a blender with water used to boil chiles. Blend to desired consistency. Salt to taste.
  • Use as an enchilada sauce, or serve with blue corn tortilla chips as a dip.
